
I made some delicious and (somewhat) healthy fried rice last night without soy sauce.
2.5 cups of cold brown rice
3 strips of bacon
2 eggs (beaten)
half a cup of scallions
2 cloves of garlic
2 tablespoons of chopped ginger
1 cup of edamame
1 chopped red pepper
3 cups of chopped bok choy
6 Tablespoons of vegetable oil
Salt to taste
Heat 3 tablespoons of vegetable oil in a wok on medium-high heat. Add bacon and red pepper. As bacon starts to crisp, add garlic, ginger and scallions.
After a few minutes add in the edamame. Then add rice, bok choy and 3 more tablespoons of vegetable oil. Stir constantly. After about 5 minutes add in the eggs and stir rapidly. Salt as desired. Serve and enjoy!
